The recent arctic temperatures here in Connecticut have encouraged me to stay close to my cozy, warm kitchen and get my oven fired up for some delicious eating. Two of my favorite things ... food and photography. For me it's a win win.
This gluten free, vegan, snack is really satisfying. If you prefer a more tart and less sweet flavor, use a granny smith apple instead. Really though, you could use any kind of apple that can successfully be cooked. These chips are best when eaten the same day they're made. Trust me, that shouldn't be a problem. at. all. and as my Grandmother always said ... mangia!
makes 24 chips
2 apples, washed - I used Fuji
1 tsp cinnamon
3 tbsp sugar
Preheat oven to 300 degrees. Slice apples on thin setting of mandoline, or alternatively slice thinly crossways. Spray a cookie sheet with cooking spray, I used canola PAM. Mix cinnamon and sugar. Place apple slices on prepared cookie sheet with 1/8" between slices. Sprinkle liberally with cinnamon sugar mixture. Bake for approximately 1 hour, or until crisped and lightly golden. Remove from oven, once cooled slightly remove from cookie sheet and place on rack to cool completely. Once cooled completely they should be crisp and delicious.
